This recipe comes from a cookbook that Aunt Judy (not really blood related, but one of Mom’s best friends) sent me for Christmas one year called Kids Cooking: A Very Slightly Messy Manual. The cookbook had lots of yummy recipes (Happel Bagel Sandwiches is another one I remember) that are easy for kids to make. It even came with its own set of measuring spoons that were color coded! One of the best-loved recipes that we’ve made probably a billion times is the Disgustingly Rich Chocolate Brownies. YUM!
They’re super easy to make and delicious!
1 c butter
3/4 c cocoa powder
2 c sugar
4 eggs
1 t vanilla
1 1/4 c flour
1/4 t salt
Preheat the oven to 350*F. Grease an 8×13″ pan (original recipe calls for an 8×8″ pan, but that makes them thicker and more cake-like. After the first time we made them, we switched to an 8×13″!).
Melt butter. Add in cocoa and sugar. Add eggs and vanilla. Add flour and salt. Stir just until smooth. (Don’t overstir!)
You can add 1/2 c of walnuts if you’d like.
Spread mixture into prepared pan. Bake 30 – 40 minutes. (Longer if you used the 8×8.) If you’re able to resist temptation, let them cool before cutting, but warm brownies always taste the best!
